Baked Lemon Pancake with Berry Sauce is a delicious breakfast and it’s so easy to make. It is perfect for serving to crowd and ideal for holidays.

Berries and citrus come naturally with springtime. Pancakes are one of my favorite meals, because they’re so easy to make and there’s no stress. Everyone loves hot pancakes. While the pancake is baking, you can prepare the berry sauce easy. Also we love adding some whipped cream to pancake always.

Ingredients

For the Berry Sauce

  • 5 cups mixed berries, fresh or frozen (about 40 oz)
  • 1/2 cup water, divided
  • 1/2 cup maple syrup
  • 2 tablespoons cornstarch

For the Pancake Bake

  • 2 1/2 cups all-purpose flour (12 oz)
  • 1 large egg
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • Juice of 1 lemon
  • Zest of 2 lemons

Instructions

Make the Berry Sauce

  1. Cook the berries.
    In a medium saucepan, combine the berries, maple syrup, and 1/4 cup of the water. Place over medium heat and cook until the berries are soft and the mixture starts to bubble.
  2. Thicken the sauce.
    In a small bowl, stir together the cornstarch and the remaining 1/4 cup water until smooth. Slowly pour it into the berry mixture while stirring.
  3. Simmer until thickened.
    Continue cooking for a few minutes, stirring often, until the sauce thickens. Remove from the heat and set aside.

Make the Pancake Bake

  1. Preheat the oven to 350°F. Grease a 9-inch pie plate or round cake pan.
  2. Mix the batter.
    In a large bowl, whisk together the flour, egg, milk, vanilla extract, baking powder, baking soda, lemon juice, and lemon zest until smooth.
  3. Bake.
    Pour the batter into the prepared pan and spread it evenly. Bake for 20 to 25 minutes, or until the top is lightly golden and a toothpick inserted in the center comes out clean.
  4. Serve.
    Let it cool for a few minutes, then slice into wedges and serve with the warm berry sauce.

Notes

  • Frozen berries work just as well as fresh here.
  • The berry sauce can be made ahead and gently reheated before serving.
  • For extra lemon flavor, add a little more zest to the batter.
  • This is great with whipped cream, powdered sugar, or a spoonful of yogurt on top.

Southwestern Egg Muffins Recipe

Even if you don’t like southwestern flavors, you can make them to your taste just by swapping the ingredients. Our favorites are bacon, crispy hash-browns and cheddar baked in a cup.

Ingredients

  • 8 large eggs

  • ½ tsp salt

  • ¼ tsp black pepper

  • ½ tsp ground cumin

  • Pinch of cayenne pepper (adjust for spice level)

  • 1 (15 oz) can black beans, drained and rinsed

  • 1 avocado, diced (plus extra for garnish)

  • 1 tomato, chopped

  • 4 oz pepper jack cheese, diced or shredded

  • Fresh cilantro, chopped (optional for garnish)

  • Non-stick cooking spray


Instructions

1. Preheat the Oven

  • Preheat your oven to 350°F (175°C).


2. Prepare the Egg Mixture

  • In a large measuring cup or bowl, whisk together the eggs, salt, black pepper, cumin, and cayenne until smooth and well combined.


3. Prep the Muffin Tin

  • Lightly spray a 12-cup muffin tin with non-stick cooking spray to prevent sticking.


4. Assemble the Muffins

  • Evenly distribute the black beans, diced avocado, chopped tomato, and pepper jack cheese among the muffin cups.

  • Pour the egg mixture into each cup, filling just below the top — the muffins will puff up while baking but will deflate slightly as they cool.


5. Bake

  • Place the muffin tin in the oven and bake for 20–24 minutes, or until the eggs are fully set and the tops are lightly golden.


6. Cool and Serve

  • Allow the muffins to cool for a few minutes before removing them from the tin.

  • Garnish with extra avocado slices and fresh cilantro, if desired.

  • Serve warm or refrigerate for later.


Tips for Success

  • Use a silicone muffin pan or parchment liners for easy release.

  • Add extras like cooked bacon, chorizo, or bell peppers for variation.

  • These muffins are perfect for meal prep — store in the fridge and reheat in the microwave for 30–40 seconds.


Make Ahead & Storage

  • Refrigerator: Store in an airtight container for up to 4 days.

  • Freezer: Wrap individually and freeze for up to 2 months. Reheat from frozen in the microwave for 1–2 minutes.


Timing

  • Prep Time: 10 minutes

  • Cook Time: 20–24 minutes

  • Total Time: ~35 minutes

French Bread Boats Stuffed with Sausage

Ingredients

  • 1 package breakfast sausage or sausage of your choice
  • 1/2 cup yellow onion, diced
  • 1 teaspoon minced garlic
  • 4 oz green bell pepper, chopped
  • 1 loaf French bread or Italian bread
  • 6 tablespoons butter, melted, divided
  • 1 teaspoon garlic powder
  • 6 large eggs
  • 1/4 cup milk (2 oz)
  • 7 slices cheddar cheese
  • 1 cup shredded mozzarella cheese
  • Chopped chives, for garnish (optional)
  • Cooked crumbled bacon, for garnish (optional)

Instructions

  1. Preheat the oven to 400°F. Line a baking sheet with parchment paper.
  2. Cook the sausage mixture.
    Heat a large skillet over medium heat. Cook the sausage, breaking it up as it browns. About 5 minutes before it is done, add the diced onion, minced garlic, and chopped green bell pepper. Cook until the sausage is fully cooked and the vegetables have softened. Set aside.
  3. Prepare the bread.
    Slice the loaf of bread in half lengthwise. If needed, scoop out a little of the soft center to make room for the filling. Place the bread halves cut-side up on the prepared baking sheet.
  4. Brush with butter.
    Use 4 tablespoons of the melted butter to brush the cut sides of the bread. Sprinkle evenly with the garlic powder.
  5. Toast the bread.
    Cover loosely with foil and bake for about 12 minutes, until the bread is warmed through and lightly crisp.
  6. Scramble the eggs.
    While the bread bakes, melt the remaining 2 tablespoons butter in a skillet over medium-low heat. In a bowl, whisk together the eggs and milk. Pour into the skillet and cook, stirring gently, until the eggs are softly scrambled. Remove from the heat while they are still slightly glossy so they do not overcook.
  7. Assemble the bread boats.
    Remove the bread from the oven. Layer the sausage mixture over the bread, then add the cheddar cheese slices, followed by the scrambled eggs. Sprinkle the mozzarella over the top.
  8. Bake until melted.
    Return the bread to the oven and bake for 2 to 4 minutes, or until the cheese is melted and everything is heated through. Watch closely so the bread does not overbrown.
  9. Finish and serve.
    Remove from the oven and top with chopped chives and crumbled bacon if using. Slice and serve warm.

Notes

  • French bread gives a crispier result, while Italian bread will be a little softer.
  • Scooping out a little of the center helps hold more filling and keeps the boats from feeling too heavy.
  • Do not overcook the eggs in the skillet since they will cook a little more in the oven.
  • These are best served warm, right after the cheese melts.
