Ingredients

Brine Mix

  • 3 cups water
  • 3 tablespoons Kosher salt
  • Optional: balsamic vinegar, garlic, and lemon

Pork Chop Marinade

  • 2 bone-in pork chops, approximately 1-inch thick
  • 2 tablespoons oil
  • ¼ cup brown sugar
  • 4 cloves garlic, finely chopped
  • ½ teaspoon dried oregano
  • ½ teaspoon dried thyme
  • 2 tablespoons butter
  • Seasoning: salt and pepper to taste

Instructions

Brining Process

  • In warm water, dissolve the salt. Allow it to cool to room temperature.
  • Fully immerse the pork chops in the brine solution. Use either a bowl or a zip-lock bag to ensure the meat is completely covered.
  • Refrigerate the pork chops in the brine for at least 30 minutes. For optimal flavor infusion, a longer brining time is recommended.

Cooking the Pork Chops

  • Preheat your oven to 400°F.
  • In an oven-proof skillet, warm the oil or ghee.
  • Dry the pork chops with a paper towel and season both sides with salt and pepper.
  • Sear the pork chops on each side for about three minutes, then remove them from the skillet.
  • Remove the skillet from the heat. Mix in the butter, brown sugar, chopped garlic, and herbs until well combined.
  • Place the pork chops back into the skillet, ensuring they’re well-coated with the sauce.
  • Transfer the skillet to the oven. Roast the pork chops until they reach an internal temperature of 145°F, which should take approximately 6-8 minutes, contingent on their thickness.
  • Once done, remove the pork chops from the oven and allow them to rest for around five minutes.
  • Drizzle the remaining sauce over the pork chops before serving.
