Ingredients

Ranch Chicken

  • 2 tablespoons olive oil
  • 4 boneless, skinless chicken breasts, cut into 1-inch cubes

Macaroni and Cheese

  • 8 ounces elbow macaroni, about 2 cups uncooked
  • ¼ cup unsalted butter
  • 3 tablespoons all-purpose flour
  • 1½ cups whole milk, warmed
  • 2 ounces cream cheese, softened and cubed
  • 2 tablespoons dry ranch seasoning
  • ⅛ teaspoon garlic powder
  • ½ cup freshly shredded white cheddar cheese
  • ¼ cup freshly shredded mozzarella cheese
  • 4 strips bacon, cooked and crumbled
  • 1 teaspoon salt, or as needed
  • Freshly ground black pepper, to taste
  • Chopped parsley, for serving

Instructions

Cook the Ranch Chicken

  1. Add the cubed chicken and ranch seasoning to a bowl. Toss until the chicken is evenly coated.
  2. Heat the olive oil in a large skillet over medium-high heat. Arrange the chicken in a single layer, cooking it in batches if needed to avoid crowding the pan.
  3. Cook for 4–6 minutes, turning the pieces as they brown. Remove the chicken once it reaches 165°F in the center. Transfer it to a plate and cover loosely with foil.
  4. Carefully wipe out the skillet and reduce the heat to medium.

Make the Mac and Cheese

  1. Cook the macaroni in salted water until just al dente. Drain it well and set aside.
  2. Melt the butter in the skillet. Add the flour and whisk continuously for 1–2 minutes, until smooth, bubbly, and lightly golden.
  3. Remove the skillet from the heat. Gradually pour in the warm milk, whisking well after each addition so the sauce remains smooth.
  4. Return the skillet to medium heat. Cook for 3–5 minutes, whisking frequently, until the sauce begins to thicken.
  5. Add the cream cheese and stir until completely melted. Mix in the ranch seasoning, garlic powder, and salt, then remove the skillet from the heat.
  6. Add the cheddar and mozzarella a handful at a time, stirring until the cheese has melted and the sauce is creamy.
  7. Fold in the drained macaroni. Taste the sauce before adding more salt, as the ranch seasoning, cheese, and bacon already provide plenty of seasoning. Add black pepper as needed.
  8. Top the macaroni with the ranch chicken and crumbled bacon. Finish with chopped parsley and serve immediately.

Tips for the Best Chicken Bacon Ranch Mac and Cheese

Cut the chicken evenly. Keep the pieces close to 1 inch so they cook at the same rate. If the skillet looks crowded, brown the chicken in two batches. Giving it some room is what creates those golden edges.

Shred the cheese yourself. Cheese grated straight from the block melts more smoothly than packaged shredded cheese, which can leave the sauce slightly grainy.

Keep the heat low when adding cheese. Take the skillet off the burner before stirring in the cheddar and mozzarella. High heat can cause the cheese to separate and turn oily.

Cook the macaroni just to al dente. It will soften a little more as it sits in the warm sauce. Overcooked pasta can become too soft and soak up more of the sauce.

Wait before adding extra salt. Ranch seasoning, bacon, and cheese are all salty, so taste the finished macaroni first. It may not need the full teaspoon listed in the recipe.
