- 3 tablespoons (50 g) pistachio butter or pistachio spread
Instructions
- Prepare the pans: Heat the oven to 350°F (180°C), or 320°F (160°C) for a fan oven. Grease and line two 6-inch (15 cm) round cake pans. Grate the carrots and roughly chop the pistachios.
- Brown the butter: Melt the butter in a small saucepan over medium heat. Continue cooking, swirling the pan occasionally, until it smells nutty and the milk solids at the bottom turn golden brown. Pour it into a bowl and let it cool for 5 minutes.
- Whisk the eggs and sugar: Whisk the brown sugar, eggs, and extra yolk in a large bowl for 2–3 minutes. The mixture should become lighter in color, slightly thickened, and foamy on top.
- Add the wet ingredients: Whisk in the cooled brown butter, vegetable oil, vanilla, and orange zest. Stir in the grated carrots and chopped pistachios until evenly distributed.
- Finish the batter: Add the flour, baking powder, baking soda, cinnamon, and salt. Fold gently just until no dry streaks remain. Avoid overmixing, which can make the cake dense.

Watch the browned butter closely: Once the milk solids turn golden and smell nutty, take the pan off the heat and pour the butter into a bowl. It can go from browned to burned quickly if left in the hot saucepan.
