Pumpkin Pie Recipe with a Blind-Baked Crust

This pumpkin pie recipe starts with a blind-baked crust so the custard sits on a dry, matte bottom instead of soaking a raw shell. I fill it with pumpkin puree, evaporated milk, and eggs, then pull it when the center still wobbles and leave it in the turned-off oven with the door cracked so the top doesn’t split. If I want a second pumpkin dessert without a crust, I bake a pan of pumpkin muffins or pumpkin cookies.

Ingredients

  • 1 (9-inch) refrigerated pie crust thawed just until pliable
  • 1 can (15 oz / 425 g) pumpkin puree (not pumpkin pie filling)
  • ¾ cup (150 g) granulated sugar
  • 1 teaspoon ground cinnamon
  • ½ teaspoon kosher salt
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves
  • 2 large eggs
  • 1 can (12 oz / 354 ml) evaporated milk

Instructions

  1. Blind bake the crust: Heat the oven to 400°F (200°C) with a rack in the lower third, fit the crust into a 9-inch pie dish, crimp the edge, and freeze it 10 minutes so it doesn’t slump. Line it with parchment, fill with pie weights or dried beans up the sides, and bake 15 minutes until the edges look dry and just starting to color. Lift out the weights and bake 5 minutes more, until the bottom looks dry and matte, not shiny, then drop the oven to 350°F (175°C).
  2. Whisk the filling: In a large bowl, whisk the pumpkin puree, sugar, cinnamon, salt, ginger, nutmeg, and cloves until the sugar isn’t gritty and the spices look even. Whisk in the eggs just until the yolks disappear, then stream in the evaporated milk and whisk until the filling is smooth. Stop as soon as it’s uniform – beating air in leaves bubbles that bake into holes and cracks.
  3. Bake until the center wobbles: Pour the filling into the warm crust. Bake at 350°F (175°C) for 40 to 50 minutes, until the edges are set and a 2-inch (5 cm) circle in the center still wobbles like gelatin when you nudge the pan. If the crust edge is browning too fast around minute 30, tent it with a strip of foil.
  4. Cool without cracking: Turn the oven off, crack the door 2 to 3 inches, and leave the pie in for 20 minutes so the temperature drops slowly. Move it to a wire rack and cool at least 2 hours, until the filling is fully set and the pan is no longer warm. Slice with a sharp knife wiped between cuts, and refrigerate if you’re not serving it the same afternoon.

If the bottom is soggy or the top cracks

  • A soggy bottom means the crust went in raw, or the weights didn’t cover the floor. After the weights come out, the bottom should look dry and matte. If it’s still shiny, bake 3 to 5 minutes more before you add filling.
  • A cracked top means you baked until a knife came out clean, or you cooled the pie fast on a cold counter. Pull it when only a 2-inch circle in the center still wobbles, then give it the cracked-door rest so the temperature drops slowly.
  • A watery slice is usually canned pumpkin pie filling (already sweetened and looser) or an underbaked pie. Use plain puree, and if the whole surface moves like soup, it needs more time – the wobble should be only in the center.

Storage

Cool the pie completely, then refrigerate it loosely covered within 2 hours. Homemade pumpkin pie is an egg-and-milk custard, so it doesn’t sit out on the counter overnight. It keeps 3 to 4 days in the fridge. To freeze, wrap the cooled pie tightly and freeze up to 1 month, then thaw overnight in the refrigerator.
