Low Carb Shrimp Zucchini Boats with Cheese

These zucchuni boats are filled with shrimps and artichokes and topped with Parmesan cheese.

Ingredients Zucchini Garlic herb seasoning Butter Raw shrimp Lemon juice Artichoke hearts Minced garlic Parmesan cheese

Slice zucchini lengthwise and hollow out the center; keep the scooped part. Brush them with olive oil and season with garlic herb.


Grill zucchini cut-side down on high for 5 minutes without flipping.


In a skillet, melt butter on and add shrimps.Add lemon juice and garlic herb seasoning. Cook for around 6 mins


In the same skillet, melt 2 tbsp butter. Add artichoke hearts (tomatoes optional) and saved zucchini. Cook until soft, then add garlic for 2 more mins.


Fill grilled zucchini with the mixture. Top with torn shrimps and sprinkle with Parmesan.
