Air-Fryer Salmon Bites in a Pineapple Bowl - A Tropical Treat!

Our Air-Fryer Salmon Bites in Pineapple Bowl recipe is a wonderful mix of flavors that will take you on a beachside feast of flavors.

Ingredients:  – Salmon fillets - Seasoning mix for salmon – Olive oil – Fresh pineapple – Mango – Avocado – Red onion – Cilantro – Salt – Chili powder – Lime juice – Canned coconut milk – Long-grain white rice – Water – Crushed red pepper

Dry the salmon with paper towels, and cut it into bite-sized pieces. Add olive oil and season with seasoning mix.

Put the salmon bites in the air fryer basket and cook for 10 minutes or until the salmon is cooked through. Cover with foil.

Start by cutting your pineapple in half lengthwise. Cut into and around the edge, about 1/2 inch from the peel. Cut out the core and toss. Using a spoon scoop out the pieces.

To make the salsa, mix the mango, avocado, red onion, cilantro, lime juice, 1/4 teaspoon salt, and chili powder in a separate medium bowl

Prepare the Pineapple Rice: Mix the coconut milk, water, and salt in a small saucepan. Over medium-high heat, bring the mix to a boil.

Stir in the rinsed rice cook on low heat for 10-15 minutes   Add the pieces of pineapple and the crushed red pepper.

Assemble the Pineapple Bowls: – Place the pineapple halves on a serving platter. Add the rice mixture, salsa and finaly salmon bites.
