Ingredients: – 1.1 Lbs of chicken breast – 1 garlic clove – 1 onion – 2 Tbsp of coconut oil – 17 oz of coconut milk – 1-3 Tbsp of red curry paste – 1/2 lime pressed – salt, pepper, and chili

Heat coconut oil in a large pan. Cut the breast of the chicken into bite-sized pieces. Peel onion and garlic and chop finely.


Salt the chicken, then fry on all sides for about 10 minutes, turning regularly. Add onion and garlic and cook for another 2-3 minutes.


Add coconut milk, curry paste, and lime juice to the pan.


Simmer for 10 minutes, then season to taste with salt, pepper, and chili.
