Hey Wendy, after you add the extra veggies, just leave the roast in the pan with them. This cooking method helps all the flavors come together beautifully, making the roast tender and delicious. It’s not necessary to place the roast back on top of the vegetables; just let everything cook together covered in the oven.

The onions were reconstituted as were green red peppers. Had no potatoes, but had frozen broccoli florets, California blend veggies. Used a touch of cream cheese. Aluminum foil to cover a glass baking dish. Seared the roast in a cast iron pan. I think the 2 # 4 oz chuck roast will fall apart. I’m a farm boy, NoDak. Maggie my schnauzer will enjoy it with me. Hay she’s 18 + yrs old (April). She deserves it. 30 more minutes til testing/feasting. Danke for your recipe/tips.
