After the initial flip, and after a further two to three minutes have passed, I will lower the heat to medium/medium-low and cover the wings in a circular basting cover.
Remove the basting cover from the wings, wait 3-4 minutes, stir, and repeat as a few times. The wings will heat up quickly. Using an instant-read thermometer is useful, as griddle-cooked wings typically take 18-22 minutes.
After the internal temperature has reached 170-175°F, your chicken wings are done. Add them to the bowl with the sauce. Toss the wings and shake the bowl.
