How to Make Candied Ginger (Crystallized Ginger) 

Ginger, a staple in many kitchens, can be transformed into a delightful confection known as candied ginger or crystallized ginger.

Start by peeling the ginger root. Slice it into thin rounds, about 1/8-inch thick.

In a large pot, boil water. Add ginger slices for 30 seconds, then drain and rinse. This mellows the ginger's strong spice.

In the same pot, combine 4 cups of water and 4 cups of sugar. Stir until the sugar dissolves, and bring the mixture to a simmer.

Drain the ginger slices and spread them out on a cooling rack over a baking sheet. Allow them to dry for at least 24 hours.
